The Distilleries

The estate tour covers the cane fields, the traditional column still distillation process, and an exceptional tasting of aged agricole rhum.
- Rhum JM: A small distillery in the north of Martinique, in the Macouba district near the base of Mont Pelée. Considered by many rum specialists to produce the finest agricole on the island. The remote location requires transportation but the volcanic terroir and small-production approach make this the connoisseur’s choice.
- Depaz: Located directly below Mont Pelée on the site of a plantation destroyed in the catastrophic 1902 eruption that killed 30,000 people. The Depaz estate was rebuilt after the eruption and today produces outstanding rhum in one of the most dramatic settings on the island. The history of Mont Pelée and the 1902 eruption — described in the distillery museum — is one of the most sobering and fascinating narratives in Caribbean history.
What to Taste
Martinique agricole rhum is divided into three main categories:
- Blanc (white/unaged): The most distinctive expression of the agricole character — grassy, vegetal, and intensely aromatic. Best appreciated in a Ti’ Punch (agricole blanc, lime, and cane syrup), the national cocktail of Martinique.
- Améde/Ambré (aged 12 months in steel): A transitional expression between the raw blanc and the aged rhum vieux.
- Vieux (aged in oak, minimum 3 years): The most complex expression — vanilla, spice, and the specific tropical-wood character of Caribbean-aged spirits. Habituation Clément’s XO aged 15 years is one of the great spirits of the French Caribbean.

Martinique’s capital is an underappreciated French Caribbean city with a genuine Parisian cafe culture, the extraordinary schoelcher library (a prefabricated iron library shipped from Paris in 1889), La Savane park, and an excellent covered market.
