Part culinary laboratory, part fine dining, part social experiment — it’s a fixed multi-course tasting menu served in a science lab-inspired space, where the menu reveals only the primary ingredient of each course and the presentation remains a mystery until the dish arrives at your seat.

The Menu

Three menus rotate through the voyage depending on the length of your sailing — Menu A, Menu B, and Menu C. Menus A and C are the most common; Menu B appears on select longer voyages. The host on day one can tell you exactly when each menu is being served, allowing you to time your reservation for the menu you prefer.
